Most Isla visitors know that "pique" (pronounced PEE - kay) is the traditional Puerto Rican hot sauce.  As a verb, when someone says "¡Pica!" that means "It's hot!"  More than heat, really good pique should bring out the flavor of the food - whether that is rice and beans or beef stew!

Lots of people make their own pique, and each has a recipe to swear by.  We're fortunate to be able to offer you just such a personal recipe, a handmade pique from a very old family, owners of Hacienda Santa Clara.

Here's their story:

Nestled near "El Salto de the Santa Clara" waterfall, whose clear waters originate high on Mount Membrillo, Hacienda Santa Clara was founded in 1846.  It soon became established as the matriarch of the coffee culture of Yauco.  In the middle of the 19th century, the hacienda began to produce Pique Artesanal Santa Clara.

The recipe used today is the same one that was passed down through the generations.  The hot peppers, garlic and onions are grown in the rich soil of the Hacienda and picked at the height of freshness and flavor.  The resulting sauce is a complex blend of flavor enhancers that will "blow your mind", or as we say in Spanish "hasta la mente te aclara."

If you have eaten in a typical Puerto Rican restaurant, you have seen the bottles of pique on each table.  Usually the peppers, garlic and onions are whole or in large pieces with the other spices and vinegar.  Pique Artesanal Santa Clara is different.  Here all the ingredients are chopped finely and blended.  The result is consistent flavor, throughout the sauce.

The sauce is bottled in two "heats":  Hot, and Very Hot.  (Previously there were milder versions, but those weren't popular...?)  Be sure to try them both.  Even though these sauces are labelled as Hot and Very Hot, the distinguishing factor is the amount of flavor they have - not just a burning tongue and a sweaty head!
