This is the newest edition of a classic Puerto Rican cookbook originally published in
1956. The book presents the traditional dishes of Puerto Rico,
prepared in the traditional ways, using the authors' original text which
addressed cooking as a job requirement of the housewife of the times.
It is a valuable source for historic techniques, ingredients and the
cultural aspects of food. Lots of recipes focusing on native
foods. Very helpful glossary, too.
The newest version includes a modern layout to make the book easier to
read and use as well as color photographs of the dishes.
